Jose V. is a friend of our family and when he saw my roasted vegetable soup recipe, he gave it a try. Here is what he had to say, “Mason, I used your technique and recipe while adding some of my favorite veggies and the soup came out amazing! I added shiitake mushrooms, shallots, fennel, cauliflower, leeks, acorn squash, celery, sweet potato, roasted corn, and carrots. The roasted corn, I shaved it off the cob after roasting and dropped into the soup after I puréed it so the soup had a little pop of sweetness and texture. I diced some of the sweet potato for garnish too. The flavor profile is crazy ridiculous good, like nothing I’ve ever made.
